Why does the outcome differ so much?

The pipeline approach forces you to think through the architecture before writing code. Templates bake in established best practices from day one. And then there's the QA layer—that adversarial testing catches the blind spots even experienced builders overlook.

Raw direct building gets the job done. But when it comes to what you'd actually deploy to production? The pipeline-driven approach is the real deal.

The difference is night and day once you've shipped a few projects.

Honestly, quick deployment and stable operation are completely two different things. I previously suffered from skipping architecture design, and only later did I realize how beneficial it is to plan ahead.

Speaking of this pipeline method, it's truly brilliant, saving so much blood, sweat, and tears lessons.

It's true that launching quickly doesn't mean it can actually be used. You only realize the gap when it goes into production.
